Types of fish

Trout

Taste

Delicate, mild, with a slight sweetness. Often considered a delicacy and versatile.

Color

Pink-orange, uniform. Can be brightly colored, especially in farm-grown.

Structure

Tender, oily, with high fat content. Easily separated into fibers.

Sockeye salmon

Taste

Bright, rich, with pronounced fishy notes. One of the most flavorful species.

Color

Deep red-orange, rich and vibrant. Distinctive and very expressive.

Structure

Dense, fleshy, with a distinct texture. Least fatty, but very juicy when cooked.

Chum salmon

Moderately rich, mild, with a slight “sea” note. Less oily than trout.

Color

Light orange, more pastel than trout and sockeye.

Pink salmon
